Bread Pudding

1 loaf French or Italian bread cut into large cubes and left out for      several hours to dry

Egg beaters - equivalent to 6 eggs

2 cups low fat milk (1%)

½ cup sugar

1 tspn vanilla

Heat oven to 375o.

Spray a 9 x 13 baking dish with cooking oil. Spread bread cubes evenly in pan. Combine egg beaters, milk, sugar and vanilla in large bowl and mix until well. Pour mixture over bread cubes. Place baking dish in a larger pan filled with approximately 1” of water.

Bake for 1 hour or until the liquid mixture has firmed and inserted knife comes out clean. Serve warm with low fat whipped topping.


Add raisins or thinly sliced apples or

Drizzle low fat butterscotch or low fat fudge sauce on top
